If I could only have three spices in my kitchen they would be cumin, chili powder and cayenne pepper. Those and a little salt and pepper are all I need to spice veggies and chicken for my favorite foods, like nachos and burrito bowls. The key is loading up these often unhealthy meals with fresh ingredients—give me all the avocado, red onion and cilantro, please.
The Chipotle-loving blogger at Well Plated by Erin shared her lightened-up spin on the popular burrito bowl, which I spotted on that sinkhole known as Pinterest. One look at her recipe and I was pretty much at the grocery store picking up ingredients. I love her idea to mix the spices (you know all my faves are in there), lime juice and olive oil right into the cooked quinoa, so flavor comes in every forkful. With a drizzle of spicy salsa on top, I was all in.
Now I’ve got enough grilled chicken, chopped vegetables and seasoned quinoa to assemble bowls for lunch most of the week. And when I need a break from bowls, I’ll do what I do best. Make nachos!
