It’s true! Look at this little ring of lemon-blueberry perfection. This was my first time making homemade doughnuts, and I must say, I feel pretty pleased with myself. What inspired this new baking adventure? Well, it was my work wife Kaitlin’s birthday! And nothing goes better with Monday morning coffee than freshly glazed doughnuts.
Kaitlin loves blueberry baked goods, and I’ve been looking for an excuse to buy a doughnut pan, so I basically had to make these lemon-blueberry goodies from The Recipe Rebel. They were super easy, too. Doughnut batter, I’ve learned, is very thick. The best way to handle it is with a piping bag—or a large plastic storage bag, if you don’t have random baking supplies scattered about. Ta-da! You’ve got fluffy, zesty doughnuts. Dipped in citrus glaze, which consists of a boatload of powdered icing sugar plus a touch of lemon juice and milk, they have a tasty sweet-sour zing. (Caution: Don’t glaze then store in a plastic storage container overnight or they’ll turn out sticky and moist. Let them dry uncovered for the optimal doughnut eating experience.)
From-scratch doughnuts look impressive but are actually surprisingly easy to make, which means my friends and family can expect me to dole out many boxes of them in the future. My sister’s bachelorette party is coming up this weekend, and I’m already brainstorming my next confection… dare I go chocolate this time?
